Kumamoto | Soba Noodles of Aso

The Japanese soul food soba noodles and the Japanese New Year tradition.
If you have searched a bit about Japanese cuisine, you have certainly come across the soba noodles. Soba is a buckwheat noodle consumed throughout Japan. You can probably tell how essential soba is to the Japanese people by the fact that they eat "Toshikoshi soba" or the New Year's Eve soba, every year. The tradition stems from the fact that the soba noodles are easily cut compared to other noodles, which symbolizes cutting negative ties and letting go of the year's hardships for a fresh start into the new year.
