島崎酒造が位置するのは栃木県の那須烏山市。東京の少し北にある穏やかな時間が流れる町です。なだらかな丘陵地帯と緑豊かな環境で、ゆっくりと休暇を過ごすのにお勧めの場所です。

この酒蔵では、地元の素材を活かして絶品の熟成酒造りに取り組んでいます。この地域で栽培された最高品質の酒米と、山々から湧き出た酒造に適した新鮮で綺麗な仕込み水。これらの素材を融合させ、昔ながらの技法で醸造することで、丹精込めて磨かれた酒米で醸した大吟醸など、様々な種類の酒を作り出しています。

おいしい日本酒の販売に加えて、島崎酒造では地下の洞窟にある貯蔵庫の見学も受け入れています。ひっそりと静かな空間の中、地下貯蔵庫からほのかに魅力的な匂いが香ってくることでしょう。

網目状に広がった洞窟の歴史は古く、元々は第二次世界大戦末期に戦車を製造するために建造されました。

入場料は無料ですが、平日のツアーには事前予約が必要です。日本酒のお土産には、ニューイヤーボトル・オーナーズボトルなど蔵元限定商品を申し込んでみてはいかがでしょうか。

Delve deep into an underground storehouse in rural Tochigi to enjoy pristine brews

Shimazaki Sake Brewery is located in the peaceful town of Nasukarasuyama in Tochigi, just north of Tokyo. With rolling hills and abundant greenery, it makes for a relaxing getaway.

This brewery creates deliciously aged sake using local ingredients. The rice cultivated in the area is of the highest quality, and the mountains provide fresh, clear water ideal for sake production. By combining these ingredients with time-honored brewing techniques, they craft sake of many varieties, including the premium Daiginjo class made with meticulously polished rice.

In addition to their delicious offerings, the sake cave of Shimazaki Sake Brewery also lets visitors tour their underground storehouse. You’ll feel the deep sense of stillness, quiet and the subtle, enticing aroma that you can only get from an underground sake cellar. The expansive cave network dates back decades, having originally been built to construct combat vehicles near the end of World War II.

Admission is free, but you’ll need to book in advance for the tour on weekdays. If you’d like to purchase some sake to take home, consider applying for the limited-edition offerings like the New Year’s Bottle and Owner’s Bottle.
