Kouan
Located in Fujisawa City, Kanagawa Prefecture, just a 45-minute train ride from Tokyo, lies a hidden gem of Japanese gastronomy. Kouan is Kanagawa’s only restaurant to have earned three Michelin stars–a distinction it held for four consecutive years from 2012 to 2015, and no small feat in a prefecture of more than 9.2 million residents.
Stepping inside, guests encounter a serene, refined space featuring seasonal themes, elegant Japanese tableware, and an interior inspired by traditional dry-landscape gardens. The restaurant is led by owner-chef Iijima Yukinori, who was born and raised in this Shonan area.
Iijima refined his craft over 12 years at Shofukuro, the legendary ryotei in Shiga Prefecture often considered a pinnacle of Japanese cuisine. Drawing from this heritage, he not only preserves classical techniques but also integrates the spirit and aesthetics of the tea ceremony into his approach. His tea-inspired kaiseki transcends conventional dining, transforming the cuisine into a cultural and almost spiritual journey.
Kouan’s proximity to Kamakura, a historic center of Zen Buddhism, allows the restaurant to incorporate the finest seasonal ingredients from Kamakura and the Shonan coastal region.
