Hyogo Tourism Bureau
Come learn about the intricacies of sake brewing at the Nishiyama Brewery in Tamba City, Hyogo Prefecture. The brewery has a history dating back to 1849, and the elegant main building was constructed in the mid-Edo period (1603-1867) in the characteristic residential style of the Tamba region. It is also a registered Tangible Cultural Property of Japan.
The brewery offers a sake tasting class and fermented foods workshop, along with regular brewery tours, where for a fee, visitors can sample many of their craft sake, which have been gaining attention both in Japan and internationally.
During the sake pairing lunch, each sake variety is carefully paired with a seasonal lunch menu prepared using locally grown ingredients and fermented foods. The head brewer will lead the pairing lunch and tasting, helping you learn how to distinguish the aromas, flavors and “colors” of sake, along with providing tips about how to enjoy Japan’s most iconic brew. Be sure to try the Junmai Daiginjo Kotsuzumi sake.
