“Goma dashi” is an indispensable seasoning in Saiki City, Oita Prefecture, which is made from such ingredients as a paste of grilled “eso (lizardfish)”, ground sesame, and soy-sauce. Even though lizardfish tends to be avoided because it has many small hard bones, it can be an excellent material for goma dashi through a careful process of removing the small bones and scales. The most popular dish using goma dashi is “Goma Dashi Udon” in which udon noodles are cooked in goma dashi -based soup. “Goma Dashi Udon” has been selected as one of “Top 100 local dishes in agricultural, mountain, and fishing villages” by the Japanese government.
“Saiki Umi no Ichiba Maru Seafood Market” has about 180 stalls, ranging from marine product processors to farmers, dealing in the area’s specialties, from goma dashi to dried/boiled young sardines, dried sea products, shiitake mushrooms, food delicacies, souvenirs, and so on.
