“Taipien” is a dish almost all Chinese restaurants in Kumamoto have on their menu, but remains relatively unknown in other places in Japan. It is extremely difficult to find a restaurant that serves Taipien outside of Kumamoto, so it is highly recommended to try this rare local dish when you visit the city. Taipien is on the menu not only of Chinese restaurants but also, for example, on school lunch menus in the city. Such ingredients as bean-starch vermicelli, various vegetables, and fried egg are in a simple broth made from chicken and vegetables. Some restaurants and families arrange this dish in various ways such as using pork bone broth, or tomato based broth, or adding such seasonal ingredients as mushroom or crab meat. Taipien has become a “soul food” of Kumamoto among locals and visitors. Bean-starch vermicelli is low in calories and healthy, which is one of the reasons for the popularity. Don’t miss Taipien when you visit Kumamoto!
