One of Kumamoto’s famous local dishes is horse meat. Horse meat is commonly referred to as "sakura niku (cherry blossom meat)", depicting the beautiful bright color of the uncooked meat, and its elegant taste has been renowned since ancient times. The meat, characterized by a low melting temperature, quickly dissolves in the mouth and has surprisingly tender texture with no strong flavor. In Kumamoto there are many restaurants where you can enjoy horse meat in simple dishes, such as sashimi and sushi. Horse meat is unique in that you can enjoy different textures and tastes from different parts, including "tategami (back of the neck)", loin, rib, and leg as uncooked sashimi meat. In addition, horse meat is low in calories and higher in protein, minerals, iron and calcium compared to pork and beef.
