Sake and Fermented Cuisine Pairing Course Guided by a Professional Sake Brewer
Savor exquisite pairings of food and sake under the guidance of a professional sake brewer in a historic 19th-century brewery
Founded in 1849, the Nishiyama Sake Brewery is famous for its delicious sake and for being a gathering place for writers and poets. The main building is a National Tangible Cultural Property which dates from 1891 and now serves as a shop. It’s a highly atmospheric space, made of wood and decorated with old sake brewing tools.
The food-and-sake pairing experience is held in a Japanese-style room which is usually off-limits to the public. The focus is very much on local offerings. Not only is the sake carefully paired with delicious local ingredients sourced from the Tamba region, but all the food is also served on locally made Tamba-yaki crockery. One of the veteran sake brewers will tell you about sake and explain the thinking behind the different pairings. This is an experience that is stimulating to both the mind and palate.
