ESqUISSE means “sketch” or “rough outline” in Beccat’s native French, but the meals presented here are fully-fledged masterpieces. ESqUISSE offers what Beccat calls a “menu spontane”, drawing on whatever ingredients are in season and inspire the chef in the kitchen. Dishes change daily, always featuring the best of seasonal Japanese ingredients brought to new life with refined French cooking techniques. Standout dishes may include combinations like abalone with liver sauce, fried shrimp appetizers accented with cilantro, or seasonal mushrooms paired with truffle consommé.
ESqUISSE is open for both lunch and dinner, with multiple course options available for each meal. Wine pairings are also available, with drinks hand-picked by veteran sommeliers to perfectly complement the dishes.
